What better way to celebrate summer than to snack on a delicious summer treat. I do a little baking from time to time (great way to relieve some stress, lol) and I came across a super easy recipe that I just had to try. Take a look at my baking adventure and hopefully it will inspire you to get your bake on!!

Mini Pineapple Upside-Down Cakes:

Perfect summer treat!!

Ingredients:

Ingredients:

  • 2/3 cup packed brown sugar
  • 1/3 cup butter, melted
  • 2 (20 ounce) cans sliced pineapple
  • 1 (18.25 ounce) package yellow cake mix
  • 3 eggs
  • 1/3 cup vegetable oil
  • 12 maraschino cherries, halved

Tools:

*Pre-heat oven to 350 degrees.

Directions: Step 1

In a small bowl, combine the brown sugar and butter; mix well. Spoon into 24 greased muffin cups. You should be able to place about a teaspoon into each muffin cup.

Step 2:

Drain pineapple, reserving the juice. Trim pineapple to fit the muffin cups; place one ring in each cup. I found it a little tricky to cut the pineapple rings to fit the muffin cups exactly. If you purchase the diced pineapples it might make this process easier.

Step 3:

In a large mixing bowl, combine the cake mix, eggs, oils and 1-1/4 cups of the reserved pineapple juice; mix well.

Step 4:

Spoon over pineapple, filling each cup two-thirds full.

Step 5:

Bake at 350 degrees F for 20-25 minutes or until a toothpick comes out clean.

Yummy….. they smell delicious!

Step 6:

Don’t eat now……they are hot! hot! hot!

Immediately invert onto wire racks to cool.

Step 7:

Time to enjoy!! (best part)

This baking project was super easy, and including prep time it took about an hour to complete. I got the recipe from www.allrecipes.com, fabulous site for easy recipes (plus it’s free!). Now the big question is…

Who wants to help clean up the mess???
